Crunchy Cheese Twists

These crispy snacks are a great addition to lunchboxes, charcuteries, soup plates, and more. They are simple to mix, fun to shape, and addictive to eat!

Ingredients:

  • 1 1/2 cup sprouted pastry flour
  • 1 1/2 cup shredded sharp cheddar cheese
  • 3 tbsp. plus 1 tsp. cold water
  • 2 egg whites
  • 1/2 tsp. salt
  • 1/2 tsp. garlic
  • 1/4 tsp. black pepper

Directions:

Stir together the flour, cheese, and seasonings. Add egg whites and water, and thoroughly combine. It’s a bit messy, but we find it easiest to start with a spoon and finish with our hands. Once kneaded into a uniform dough, allow to rest for 10-20 minutes.

On a well-greased or parchment-lined surface, roll the dough into a thin sheet, 1/8 inch or so. Cut into strips about 3/4 inch wide by 6 inches long. Twist strips two or three times and place on greased cookie sheet. Bake for 20-30 minutes, until crispy all the way through. If you aren’t sure if they are done, remove from the oven and allow to cool a bit before testing- if they are still soft in the middle just put them back in the oven for a few more minutes. Cool completely and store in an airtight container.

Alterations:

Get creative with your seasonings! Other than the first five ingredients, this recipe can be modified in many ways. Spice them up with a pinch or two of cayenne or red pepper flakes. You can also add toppings like poppyseeds, minced onion, or coarse sea salt after rolling them out. Simply sprinkle on the toppings before cutting into strips, and press gently into the dough with the rolling pin. Cut and twist as usual.
