Chocolate Peanut Butter Oat Bites

Granola bar, meet muffin. These soft and chewy, oh-so-munchable oat bites are the perfect thing to take camping, road tripping, commuting, or anywhere you want a high energy snack on the go.

Ingredients:

  • 1/4 cup oil
  • 1/3 cup honey
  • 1/2 cup peanut butter
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 1/2 tsp. baking powder
  • 3 cups sprouted rolled oats
  • 1/2 cup chocolate chips
  • Sea salt (optional)

Preheat oven to 350 degrees. In a medium mixing bowl, stir together oil, honey, vanilla, and peanut butter. Place rolled oats, salt, and baking soda in a food processor. Pulse several times until oats are crumbly, but not yet flour. Add dry ingredients and chocolate chips to the peanut butter mixture and stir to combine.

Once well mixed, scoop 12 portions into a well-greased muffin tin (a cookie scoop works well for this). With a greased serving spoon or measuring cup, press the batter into the cups. Sprinkle the tops with a bit of sea salt (optional). Bake for 10-12 minutes. The oat bites should be mostly set, but still a bit soft to the touch when they are removed from the oven. They will firm up more once they cool.
