Bring the tropics to your table with these indulgent treats!
Ingredients:
- 1 cup sugar
- 1 tbsp. lime zest
- 8 oz package of cream cheese
- 2 eggs
- 1/2 tsp. vanilla
- 4 tsp. lime juice
- 2 tsp. baking powder
- 1/2 tsp salt
- 1 & 1/2 cup sprouted pastry flour
- 2/3 cup white chocolate chips
- 2/3 cup shredded coconut
Topping:
- 1 tbsp. Lime juice
- 6 tbsp. Powdered sugar
- Extra shredded coconut.
Directions:
Using a mixing spoon or by hand, work lime zest into the sugar. Once well mixed, set aside for 10-15 minutes. Then add cream cheese and beat until smooth. Mix in eggs, vanilla, and lime juice. In a separate bowl, stir together the salt, baking powder, and flour. Carefully add dry ingredients into wet ingredients and mix until mostly combined, then fold in white chocolate chips and coconut until just incorporated. Avoid overmixing. Allow batter to stand for 20-30 minutes. Preheat oven to 350 degrees.
After resting, portion batter into a lined or well-greased muffin tin. Bake for 17-20 minutes. Remove from pan once cool enough to handle. Stir together glaze, and spoon into a plastic sandwich bag. Once muffins are completely cool, cut off a small corner of the bag and drizzle on the glaze. Sprinkle with more shredded coconut. Store in the refrigerator. Delicious chilled, or heated a bit in a toaster oven to toast the coconut.
