Because of the common use of “white flour” and “whole wheat flour” in the kitchen, there can be confusion as to how “white whole wheat” flour is possible. All our flour is 100% whole grain, including Hard White. The difference is that the grain berries in white wheat lack much of the bran tannins found in red wheats, giving them a naturally lighter color and sweeter taste. Nutritionally, Hard White is very similar to the more common Hard Red wheat.
